Apple Pancakes With Guest Author Chris Pavesic (Revelation Chronicles)

Breakfast may be the most important meal of the day, but it doesn’t always feature the most delicious dishes. People are rushed and will grab just about any type of convenience food on their way out the door.
These Apple Pancakes take only a few minutes, are healthy, and I hope you will agree are worth the wait!
Ingredients:
  • 1 cup all purpose flour
  • 2 eggs, lightly beaten
  • 3 small McIntosh apples, finely chopped
  • 1/2 cup milk
  • Cinnamon (optional)
  • Vegetable Oil or Butter
  • Honey (optional)
Materials:
  • Measuring cups
  • Medium bowl
  • Spoon
  • Frying Pan or Griddle
  • Spatula
Directions:
1.  Mix flour, milk, and eggs until batter is smooth.  Fold in apples and sprinkle with cinnamon if desired.  To cook–heat a lightly oiled frying pan (or griddle). Place a heaping tablespoon of batter in the frying pan. Brown on both sides and serve hot.
Top with honey if desired.

A Recipe & A Book Excerpt! – Tomato Sandwich With Vegan Mayonnaise by Chris Pavesic Author of The Revelation Chronicles!

                                     Tomato Sandwiches with Vegan Mayonnaise

These sandwiches are heavenly! Homemade bread, garden-fresh tomatoes, and vegan mayo are keys to why this sandwich lights me up!

Here’s What She Said!

Readers of the Revelation Chronicles know that my main characters love Tomato Sandwiches.

This recipe is very simple:

Homemade Bread
Sliced Garden Tomatoes
Lettuce
Mayonnaise

To make it special, I have included a recipe for Vegan Mayonnaise. Enjoy!


You only need 4 ingredients to make this vegan mayonnaise and it’s ready in just 2 minutes!

Ingredients

1 cup Avocado Oil
½ cup Unsweetened Plant-based Milk
2 teaspoons Apple Cider Vinegar (or Key Lime juice)
Sea salt to taste

Materials

Measuring Cup
Measuring Spoon
Large Bowl
Immersion Blender or Regular Blender

Directions

1. The oil and the plant-based milk should be at the same temperature. It is easier to blend.
2. If you use an immersion blender: combine all the ingredients in bowl. Place the immersion blender in so that it sits firmly on the bottom of the bowl and pulse until the mayonnaise emulsifies. Once most of the vegan mayo has emulsified, you can move the blender up and down to incorporate any oil that is sitting on the top.
3. If you use a regular blender: place all the ingredients in the blender, except the oil, and blend for about 5 seconds. Then add the oil gradually while the blender is going, turning it from low to high until it thickens.
Note: I make this with almond milk rather than soy because of allergies. Almond milk makes a thinner mayonnaise than soy milk. To thicken—simply decrease the amount of liquid by one teaspoon.
If you use Key Lime juice rather than Apple Cider Vinegar, the mayonnaise will be sweeter.

Above the tree line floats an airship close to three hundred feet long with a slightly rounded wooden hull. Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

Recommended Books: Starter Zone by Chris Pavesic

Starter Zone

LitRPG YA Fantasy is a new genre for me. A refreshing one. Reading Starter Zone (2017), the first book in the Revelation Chronicles, took me back to my family living room where my brothers, sister, parents, and I would compete for the best score on Asteriod and later, Super Mario Brothers. Much, much later we played quest games like the one written about in Starter Zone where competing fell by the wayside and we tapped into our collective skills to beat the game. Reading about Cami and Abby’s stats, quests, and trainers took me right back into a gaming world I once loved.

Starter Zone is my first book by Pavesic. Reading a new author is an exciting gamble that I’m betting I will win. That’s the result I got with her.

The best books make you forget that you are reading. Instead, they immerse you in a world brought to life by the author’s words. Pavesic did that. She also taught me that some of my short stories in progress fall into the speculative science fiction genre. The best stories entertain and inform at the same time.

Pavesic’s story is high concept and easy to relate to. Two young sisters are orphaned in a dystopian world. Cami is 17, Abby is 7. As unlikely as it seems, the starter zone of the title is marginally safer than the outside world. Especially because of Cami’s street smarts. There are no wasted characters or words in this story. It moves, moves, moves.

My recommendation to read this book is based on the fact that I couldn’t put it down and finished it in record time.

If I say more you will not get to taste the same adventure I did, and that would be selfish of me!

Starter Zone’s is followed by Traveler’s Zone.

Join author Chris Pavesic in the virtual kitchen with this healthy Couscous Salad recipe and a sneak peek into her new novel, Starter Zone.

 

This recipe is a family favorite. Some like it when I make it with goat cheese while others prefer feta. The choice is yours. (I think both are equally delicious!)

 

Ingredients:

  • 1/2 cup orange juice
  • 1 1/2 cups water
  • 2 cups plain couscous
  • 1 cup dried cranberries
  • 1 cup cubed peeled cucumber
  • 1/4 cup chopped parsley
  • 1/2 cup chopped green onion (scallion)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons distilled vinegar (balsamic vinegar works too)
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1/2 cup crumbled goat cheese (or feta cheese)
  • 1/4 cup pine nuts, toasted (or toasted almonds slivered)
  • salt and pepper to taste

 

Materials:

  • Measuring spoon
  • Measuring cup
  • Saucepan
  • Small bowl
  • Large bowl
  • Fork
  • Small skillet 
    1.  Pour pine nuts into skillet and cook on medium heat.  Toast about 2 minutes stirring occasionally to prevent burning.  Set aside to cool.
    2.  In a saucepan, bring the orange juice and water to a boil.  Stir in the couscous, cover; remove from heat and let stand for 5-7 minutes.
    3.  Transfer to a large bowl, and fluff with a fork.
    4.  Add the cranberries, cucumber, parsley, and green onion, mixing well.
    5.  In a small bowl, whisk together the mustard, vinegar, honey, and garlic.
    6.  Pour the dressing over the couscous, mixing well, and stir in the goat cheese and pine nuts, carefully tossing together.
    7.  Add the salt and pepper to taste.  Serve at room temperature or chilled.
